A Little Taste Of France Puddings La Galette des Rois

LA GALETTE DES ROIS

This cake is eaten in France to celebrate the Epiphany (6th of january). Usually, we cut the cake and the youngest person in the room has to go under the table to designate which person will have which part of the cake while someone is pointing the parts on the table. This tradition is due to the fact that there is a charm in this pudding and the person finding it while eating is designated as the King or the Queen!

For 6 persons.                                                                                   

2 puff pastries

100g of almond powder

75g of sugar

1 egg                                                                                               

50g of soft butter

some drops of bitter almond essence

1 egg yolk

1 charm !

Put one of the pastries in a mould and make little holes with a fork.

In a bowl, mix all the ingredients (almond powder, suger, egg, soft butter, almond essence). Spread this mixture on the pastry and put the charm in it. Close the "galette" by putting the second puff pastry on the top and stick the two pastries together.

With a knife you can draw some figures on the top of the "gallette" and spread the egg yolk on it so it will take a beautiful golden colour while cooking.

Put in the oven at 210°C (th 7) during 30 minutes... And enjoy it lukewarm it is even better!!!!
