A Little Taste Of France Puddings Beingets de Carnaval

LES BEIGNETS DE CARNAVAL.

 This delicious little cakes are usually eaten during the Carneval time in France, that is from February to the beginning of March. Originally, during this period, everybody was enjoying and dancing on the street and people used to disguise. This period of the year was associated with this specific pastry only made of dough and deep fried.

Recipe

For 8 persons

500g of sifted flour

1/4 litre of lukewarm milk

3 tablespoon of sugar

2 eggs

75g of butter

a pinch of salt

20g of brewer's yeast

 

Put the flour in a bowl and make a hole in the middle. In this hole put all the ingredients. Knead to obtain a soft, flexible and airy dough. Spread the dough but not too much (1cm thickness). and cut it into squares or circles (with a glass for example).

Fry until it has a golden colour (the oil does not have to be too hot). Drain the "beignets" and sprinkle icing sugar on top of it.

You can eat it cold or lukewarn.

It will be delicious with cinnamon on top of it or with stewed apples.
